青叶饭

鲜草汁: (每种各10片)

蓝花、芫茜种子、胡椒粒、黄姜、蓝姜、九层塔、班兰叶、香茅、鸡粪藤、姥叶、麻疯柑叶、桑叶、树子菜、优遁草。


配料:

黄瓜4个

香茅5枝

长豆4条

椰丝(加糖炒过一遍)1饭碗

姜花4枝


做法:

1.所有材料都需生食,务必要彻底洗净,再来切丝。

2.把鲜草汁的各种材料利用果汁机打烂,榨汁及过滤,把过滤后的鲜草汁,倒入饭锅内与香米烹煮。

3.煮饭的过程中,可以开始把配料切成丝。

4.绿饭煮熟后,与所有配料及素鱼饼一起混合即可。



Khao Jam

 

Fresh herbs  juice :

Blue flowers, coriander seeds, peppercorns, turmeric, blue ginger, basil, pandan leaves, lemongrass, paederia, wild betel leaves, leprosy leaves, mulberry leaves, Breynia androgyna, and Sabah snake grass. (10 pieces of each type.)


Ingredients :

Cucumber 4 pieces

Lemongrass 5 branches

Long beans 4

Shredded coconut (fried once with sugar) 1 rice bowl

Ginger flower 4 branches


Method:

1.All ingredients must be eaten raw and must be washed thoroughly before cutting into shreds.

2.Use a juicer to mash the various ingredients of the fresh herbs juice, squeeze and filter the juice. Pour the filtered fresh herbs  juice into a rice pot and cook with fragrant rice.

3.During the cooking process, you can start cutting the ingredients into shreds.

4.After the green rice is cooked, mix it with all the ingredients and vegetarian fish cakes.

青叶饭Khao Jam,又叫野菜饭。在泰语khao是饭,Jam为凉拌,也就是拌饭。据说传统野菜饭是由上百种野菜所制成的。而今已是无法掌握上百种野菜的种类,基于环境的开放,变迁以及未被人们记录或认识的情况下,逐渐消失。

制作野菜饭首先就是采用多种野菜,如辣木叶,黄瓜叶,黄姜叶,老姜,诺丽,香茅等等榨汁过滤后加入白米煮成绿饭。

接着将可生食的菜如长豆,黄瓜,姜花,叻沙叶,洋葱洗净切絲作为生食的拌菜。

再者就是准备素鱼肉,椰絲翻炒至焦黃香脆成为野菜饭的拌料,另外加上鱼饼,咸蛋增添层次口感,最后淋上素鱼露,一道清爽而口感层次丰富的野菜饭就完成了……

Green leaf rice khao Jam, also called wild vegetable rice. In Thai, khao means rice, and jam means cold salad, which is bibimbap. It is said that traditional wild vegetable rice is made from hundreds of kinds of wild vegetables. Nowadays, it is impossible to grasp hundreds of wild vegetable species, and they are gradually disappearing due to the changes of the environment and because they are not recorded or recognized by people.

To make wild vegetable rice, you first need to use a variety of wild vegetables, such as moringa leaves, cucumber leaves, turmeric leaves, ginger, noni, lemongrass, etc., squeeze the juice and filter it, then add it to white rice and cook it into green rice.
