[ 炸 鸳 鸯 年 糕 ]

材料

A)

糯米粉 320克

澄面粉 30克

马蹄粉 20克

巧古力粉 20克

水 220克


B)

白糖 280克

水 200克 


C)

香蕉叶 1片 

  

D)炸面糊材料:(拌均成面糊) 

自发面粉 100克

粘米粉 4大匙

旦王粉 2大匙

水 适量

油 6大匙

盐 1/4茶匙


E)

冷冻春卷皮 适量

面粉糊 适量


做法:

1. 将(B)料白糖烧至起泡成金黄色,慢慢加入水煮开待温备用。

2.将(A)料拌均成粉浆然俊才加入做法(1)搅拌均匀过滤成年糕粉浆。

3.取一蒸盆抹油,铺上香蕉叶再抹油,将做法(2)年糕粉浆倒入,隔水蒸一小时即成。待冷,放入雪柜隔夜备用。

4.巧古力年糕切条,班兰年糕(请参考芝麻班兰年糕)切条。两种年糕叠在一起,用春卷皮包好,用面粉糊收口。沾上炸面糊,炸至金黄色即成。

  

Deep Fried Chocolate New Year Cake ]

Ingredients:

A) 

Glutinous flour 250 g

Wheat starch flour 30 g

(Tang min flour)

Water Chestnut flour 20 g

Chocolate powder 20 g

Water 220 g


B)

Sugar 320 g

Water 200 g


C)

Banana leaf 1 sheet


D)Deep frying batter ingredients :(mixed well) 

Self-raising flour 100 g

Rice flour 4 tbsp

Custard flour 2 tbsp

Water a little

Oil 6 tbsp

Salt 1/4 tsp


E) 

Chilled spring roll skin a few sheets

Batter a bit 


Method:

1. Cook ingredient (B) sugar until bubble up and golden colour. Slowly add in water to boil, set aside until luke-warm.

2. Mix Ingredient (A) until well blended . Add into Step (1) to mix well and strain to form smooth New Year Cake batter.

3. Lined a greased steamer tray with greased banana leaf , pour the Step (2) New Year Cake batter into it and steam for one hour. Cool down , then efrigerate over night.

4. Cut the refrigerated Chocolate New Year Cake and Pandan New Year Cake (please refer Sesame Pandan New Year Cake' recipe ) into Thick Strips. Arra-

nge the chocolate and pandan new year cake strips alternately in two layers and cut into small squares. Used the chilled spring roll skin to wrap the square cakes and seal with batter. Dip in Deep Frying Batter ingredient (D) to fry until golden, then serve.
