·西 式 杂 烩 浓 汤·

高汤材料

牛油 2汤匙

橄榄油 1 汤匙

菜花油 1 汤匙

烤香腰豆 半碗

包菜硬梗 1碗(剁碎,代替洋葱甜度)

面粉 4 汤匙

鲍鱼菇 500 克(拔丝)

椰花菜 300 克(剥小朵)

黑胡椒碎 2 茶匙

白胡椒粉 1 茶匙

百里香干碎叶 2 汤匙

干月桂叶 2 大片

罐头玉米汤 1 罐

水 3OOO 毫升


做法:

1)鍋里烧热牛油、橄榄油、菜花油炒香腰豆和包菜梗碎。

2)慢慢加入面粉炒至稍微变色即可。

3)加入鲍鱼菇丝、椰花菜、黑胡椒碎、白胡椒粉、干百里香叶,干月桂叶炒均匀至香。

4)倒入水和罐头玉米浓汤大火煮沸,转小火煮约半小时,熄火待冷。

5)用食物料理机搅拌成细滑糊狀即可,待用。



材料(切丁炒香):

橄榄油 1 汤匙

素虾 10 只

马玲薯 2 粒

西芹 1 支

红萝卜 1 條

玉米粒 1 條

罐头蘑菇 1 罐

罐头草菇 1 罐


调味料:

盐 1 茶匙

黑胡椒碎 半茶匙

香菇味素 半茶匙

奶油 200 毫升


装饰:

柠檬汁               

黑胡椒碎

新鲜欧芹碎


做法:

1)用橄榄油烧热锅加入切丁食材炒至香味溢出,熄火。

2)把糊状高汤煮滚后加入炒香的切丁材料。

3)最后加入调味料煮至沸腾熄火,乘热盛碗撒入装饰即可享用。

· Western Vegetarian Chowder ·

Soup base ingredients:

Butter 2 tbsp

Olive oil 1 tbsp

Vegetable flower oil 1 tbsp

Toasted cashew nuts 1/2 bowl

Cabbage hard stems 1 bowl(chopped)

Plain flour  4 tbsp

Abalone mushroom 500 gm(shredded)

Cauliflower 300 gm(peel into small pieces)

Crushed black pepper 2 tsp

White pepper 1 tsp

Dried thyme flakes 2 tbsp

Dried bay leaves 2 big pieces

Cream of corns 1 can

Water 3000 ml


Soup base method:

1) Heat up butter, olive oil, vegetable oil in the pot add in cashew nuts and chopped cabbage harden stem (substitute onions sweetness) stir fry till aromatic.

2) Add in plain flour slowly spoonful by spoon till slightly brown.

3) Add in shredded abalone mushroom, cauliflower, crushed black pepper, white pepper,dried thyme,bay leaves stir fry evenly till aromatic.

4) Pour in water and creamy corn cook under high heat,after boiled turn into low heat cook about 1/2 hour, turn off heat set aside till cool.

5) Use food processor blend soup base till smooth and fine texture,set aside.



Sauté diced ingredients:

Olive oil 1 tbsp

Vegetarian prawns 10 nos.

Potatoes 2 nos.

Celery stalk 1 stalk

Carrot 1 no.

Sweet corn 1 no.

Button mushroom 1 can

Straw mushroom 1can


Seasoning:

Salt 1 tsp

Crushed black pepper 1/2 tsp

Mushroom stock granules 1/2 tsp

Cooking cream 200 ml


Toppings:

Lemon juice

Crushed black pepper

Chopped fresh parsley


Method:

1) Heat up olive oil in pan add in diced ingredients sautéed till aromatic.Turn off heat.

2) Boil method 5 soup base till boiling level, add in method 1 sauté ingredients .

3) Finally add in all seasoning until fully boiled and turn off heat. Serve while hot with sprinkle toppings on soup. Enjoy.
