| 莲花月饼|
材料(1)—水皮:
中筋面粉 200克
甜奶 1/2茶匙
栗油 2大匙
白醋 1/2茶匙
冷水 适量
材料(2)—油酥:
低筋面粉 200克
白油 150克
馅料:
莲蓉 1.2公斤
榄仁 适量
水皮做法:
A.
中筋面粉中间挖一个洞,加入所有材料搓成面团成水皮备用。
油酥做法:
B.
1)低筋面粉和白油搓成面团备用。
2) 取适量油酥加入粉红色素备用。
3)取适量油酥加入黄色素备用。
4)其余的油酥加入青色素备用。
C.
1)水皮包油酥,扞平,折叠,再扞平,卷起,再扞平,再卷起将它分割成20份,每一等份扞成圆形,包入莲蓉馅料即成。
2)将烘炉设置为1800C,烘20分钟左右。
|Lotus Moon Cake|
Ingredients for water skin:
Medium protein flour 200gm
Condensed milk 1/2 teaspoon
Corn oil 2 tablespoon
Vinegar 1/2 teaspoon
Sufficient cold water
Ingredients for oil skin:
Low protein flour 200 gm
Vegetable shortening 150 gm
Filling:
A dash of coriander leaves and red chili
For Thickening:
Lotus paste 1.2 kg
Sufficient olive kernels
Method for water skin pastry (A):
Mix the water skin ingredients into a dough and leave a side.
Method for oil skin pastry (B):
Mix oil skin ingredients into a dough and leave a side. Divide the dough into 3 portions
and mix each portion with yellow, green and pink colouring.
Method (C):
Wrap the oil skin with water skin,roll flat and fold and roll flat again; roll up and roll flat again and roll up again. Divide into 20 portions. Roll each portion into a round pastry. Wrap each skin with lotus paste. Bake for 20 mins
in a 1800 oven.
